- 12 ounces Orecchiette Pasta
- 1 bunch Broccoli Rabe
- 1 pound Italian Sausage
- 4 cloves Garlic, minced
- 2 tablespoons Olive Oil
- Parmesan Cheese, for serving
- Salt and Pepper, to taste
Instructions
- Start by bringing a large pot of salted water to a boil. Add the orecchiette pasta and cook according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set it aside.
- In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté for about 1 minute, or until fragrant.
- Add the Italian sausage to the skillet, breaking it into smaller pieces. Cook for about 6-8 minutes until browned and cooked through.
- Wash and trim the broccoli rabe, then add it to the skillet. Sauté for 3-4 minutes until wilted and tender.
- Add the cooked orecchiette pasta to the skillet with a splash of the reserved pasta water. Toss everything together and adjust seasoning with salt and pepper.
- If desired, add grated Parmesan cheese and serve hot, garnished with fresh basil.
