1 pound Chicken breast
1 cup Orzo pasta
2 cups Chicken broth
1 cup Cherry tomatoes
2 cups Spinach
3 cloves Garlic, minced
2 teaspoons Italian seasoning
½ cup Parmesan cheese, grated
2 tablespoons Olive oil
Salt and pepper, to taste
Instructions
Preheat your oven to 375°F (190°C).
In a large skillet over medium heat, heat the olive oil. Add the minced garlic and sauté for about 1 minute, until fragrant.
Add the chicken breasts to the skillet, sprinkling them with Italian seasoning, salt, and pepper. Cook until the chicken is browned on both sides, about 4-5 minutes per side.
Remove the chicken from the skillet and set it aside. In the same skillet, add the cherry tomatoes and spinach. Cook until the spinach wilts and the tomatoes soften, about 3-4 minutes.
