  • 1 cup Orzo pasta
  • 2 cups Chicken broth
  • 1 cup Cherry tomatoes
  • 2 cups Spinach
  • 3 cloves Garlic, minced
  • 2 teaspoons Italian seasoning
  • ½ cup Parmesan cheese, grated
  • 2 tablespoons Olive oil
  • Salt and pepper, to taste

  • Instructions

  • Preheat your oven to 375°F (190°C).
  • In a large skillet over medium heat, heat the olive oil. Add the minced garlic and sauté for about 1 minute, until fragrant.
  • Add the chicken breasts to the skillet, sprinkling them with Italian seasoning, salt, and pepper. Cook until the chicken is browned on both sides, about 4-5 minutes per side.
  • Remove the chicken from the skillet and set it aside. In the same skillet, add the cherry tomatoes and spinach. Cook until the spinach wilts and the tomatoes soften, about 3-4 minutes.
  • Add the orzo to the skillet, stirring to combine with the vegetables. Pour in the chicken broth and bring to a simmer. Let it cook uncovered for about 10 minutes, or until the orzo is al dente.
  • Slice the chicken breasts, then nestle them into the orzo mixture. Sprinkle the top with grated Parmesan cheese.
  • Transfer the skillet to the preheated oven and bake for 20-25 minutes, until the cheese is melted and bubbly.
