2 large onions
1 cup gluten-free breadcrumbs
1/2 cup grated Parmesan cheese (optional)
1/4 cup milk (dairy or non-dairy)
1 tablespoon paprika
Salt and pepper to taste
Olive oil spray or cooking spray
Instructions
Preheat the oven to 400°F (200°C).
Peel and slice the onions into thin rings, about 1/4 inch thick.
Place the onion slices in a bowl and pour the milk over them, ensuring all pieces are coated. Let them soak for about 10-15 minutes.
In another bowl, combine the gluten-free breadcrumbs, grated Parmesan cheese (if using), paprika, salt, and pepper. Mix well.
Take each onion ring out of the milk and dip it into the breadcrumb mixture, pressing gently to adhere. Place coated onion rings on a baking sheet lined with parchment paper.
Lightly spray the tops of the coated onions with olive oil or cooking spray.
Bake in the preheated oven for 15-20 minutes or until golden brown and crispy.
