  • 2 cups mushrooms, sliced
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1/2 cup white wine
  • 1/2 cup Parmesan cheese, grated
  • 2 tablespoons butter
  • Fresh parsley for garnish

  • Instructions

  • Preheat your oven to 375°F (190°C).
  • In a large oven-safe pot, melt the butter over medium heat. Add the chopped onion and garlic, sauté until they are translucent and fragrant, about 3-4 minutes.
  • Stir in the sliced mushrooms and cook until they are softened and browned, approximately 5-6 minutes.
  • Add the Arborio rice to the pot, stirring to coat it in the sautéed vegetables for about 2-3 minutes.
  • Pour in the white wine, stirring until it is absorbed.
  • Slowly add the vegetable broth, mixing well to combine. Bring to a simmer.
  • Cover the pot with a lid or aluminum foil and transfer it to the preheated oven.
  • Let it bake for about 25 minutes, or until the rice is al dente and has absorbed most of the liquid.
  • Remove the pot from the oven, and stir in the grated Parmesan cheese.
  • Top with fresh parsley and any additional garnishes of your choice. Serve hot.
