1 cup Arborio rice
2 cups mushrooms, sliced
1 medium onion, finely chopped
2 cloves garlic, minced
4 cups vegetable broth
1/2 cup white wine
1/2 cup Parmesan cheese, grated
2 tablespoons butter
Fresh parsley for garnish
Instructions
Preheat your oven to 375°F (190°C).
In a large oven-safe pot, melt the butter over medium heat. Add the chopped onion and garlic, sauté until they are translucent and fragrant, about 3-4 minutes.
Stir in the sliced mushrooms and cook until they are softened and browned, approximately 5-6 minutes.
Add the Arborio rice to the pot, stirring to coat it in the sautéed vegetables for about 2-3 minutes.
Pour in the white wine, stirring until it is absorbed.
Slowly add the vegetable broth, mixing well to combine. Bring to a simmer.
Cover the pot with a lid or aluminum foil and transfer it to the preheated oven.
Let it bake for about 25 minutes, or until the rice is al dente and has absorbed most of the liquid.
Remove the pot from the oven, and stir in the grated Parmesan cheese.
Top with fresh parsley and any additional garnishes of your choice. Serve hot.
