4 fillets of fresh cod (about 6 oz each)
1 teaspoon of salt
1/2 teaspoon of black pepper
2 tablespoons of olive oil
1/4 cup of unsalted butter
Zest of 1 lemon
Juice of 1 lemon
Zest of 1 orange
Juice of 1 orange
1/4 cup of fresh basil, chopped
Instructions
Prepare the Fish: Start by patting the cod fillets dry with a paper towel, then sprinkle both sides with salt and pepper.
Heat the Pan: In a large skillet, heat the olive oil over medium heat.
Cook the Cod: Place the fillets in the skillet, skin-side down if they have skin. Cook for about 4-5 minutes until the bottom is golden brown, then gently flip them over and cook for another 3-4 minutes until cooked through and flaky. Remove the fish from the skillet.
Make the Sauce: In the same skillet, lower the heat and add the butter. Let it melt and foam, then stir in the lemon and orange zest, followed by the citrus juices.
Add the Basil: Toss in the fresh basil and stir it all together for about a minute.
Combine: Return the cooked cod to the pan, spooning the sauce over each fillet.
