  • 2 large eggs
  • 1/4 cup all-purpose flour
  • 1 tablespoon olive oil
  • 1 cup heavy cream
  • 2 tablespoons fresh parsley, chopped (for garnish)

  • Preheat your oven to 400°F (200°C).
  • Place the chicken breasts between two sheets of plastic wrap and beat them with a meat mallet or rolling pin until even in thickness.
  • In three shallow dishes, set up your breading station:
  • In the first dish, combine the flour with salt and pepper.
  • In the second dish, whisk the eggs until frothy.
  • In the third dish, mix Parmesan cheese, breadcrumbs, minced garlic, garlic powder, and more salt and pepper.
  • Dredge each piece of chicken in the flour, then dip in the egg mixture, allowing excess to drip off.
  • Press the chicken into the breadcrumb mixture, ensuring it’s fully coated.
  • In a large oven-safe skillet, heat olive oil over medium-high heat.
  • Place the breaded chicken in the skillet and sear for about 3-4 minutes on each side until golden brown.
  • Transfer the skillet to the oven and bake for 20-25 minutes or until the chicken is cooked through (165°F/75°C).
  • While the chicken bakes, heat heavy cream in a small saucepan over medium heat (do not boil).
  • Add minced garlic to the cream and simmer for about 3-4 minutes.
  • Season with salt and pepper to taste, and add red pepper flakes if desired.
  • For a thicker sauce, mix cornstarch with water and stir into the sauce until thickened.
