  • In a large mixing bowl, beat together the softened butter and granulated sugar until light and fluffy. This usually takes about 4-5 minutes.
  • Incorporate the eggs one by one, mixing well after each addition.
  • In a separate bowl, sift together the flour, baking powder, and salt.
  • Gradually fold in the dry ingredients to the butter mixture, alternating with the lemon juice. Start and finish with the dry ingredients.
  • Gently fold in the lemon zest until evenly distributed.
