1 ½ cups all-purpose flour
½ cup unsalted butter, cold and cubed
1/4 cup granulated sugar
1/4 teaspoon salt
1 egg yolk
2–4 tablespoons ice water
4 ripe peaches, peeled, pitted, and sliced
1/2 cup almond paste or marzipan
1/4 cup granulated sugar
2 tablespoons cornstarch
1 teaspoon vanilla extract
1 teaspoon almond extract
1 egg, beaten (for egg wash)
Sliced almonds (for sprinkling on top)
Powdered sugar (for dusting)
Instructions
In a large mixing bowl, combine the flour, sugar, and salt. Add in cold, cubed butter and blend until it resembles coarse crumbs. Stir in the egg yolk and add ice water until the dough comes together. Chill for 30 minutes.
In a medium bowl, combine almond paste, sugar, cornstarch, vanilla extract, and almond extract. Mix until smooth, then fold in the sliced peaches.
Preheat your oven to 375°F (190°C). Roll out the dough into a circle and fit it into your tart pan. Prick the bottom with a fork.
Spread the peach filling evenly over the crust and sprinkle sliced almonds on top. Brush the edges with beaten egg.
Bake for 30-35 minutes until the crust is golden brown and the filling is bubbly.
Let it cool for 10 minutes before transferring to a wire rack. Dust with powdered sugar and serve.
