Ingredients
Scale
- 1 ½ cups graham cracker crumbs
- ¼ cup sugar
- ½ cup butter, melted
- 16 oz cream cheese, softened
- ¾ cup sugar
- 2 eggs
- 1 tsp vanilla extract
- 2 cups canned peaches, drained and chopped
- ¼ cup brown sugar
- 1 tsp cinnamon
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until combined. Press the mixture into the bottom of a greased 9×13 inch baking dish, ensuring it’s even and compact. Bake for 10 minutes, then remove from the oven and let it cool.
- In another bowl, beat the softened cream cheese and sugar together until smooth. Add in the eggs one at a time, mixing well after each addition. Finally, mix in the vanilla extract.
- Pour the cheesecake mixture over the cooled crust, spreading it evenly.
- In a small bowl, combine the chopped peaches, brown sugar, and cinnamon. Mix well, then spoon the peach mixture over the cheesecake layer.
- Return the baking dish to the oven and bake for an additional 30-35 minutes or until the cheesecake is set and the edges are lightly golden.
- Allow the bars to cool at room temperature for 1 hour, then refrigerate for at least 3 hours (or overnight) before slicing them into bars.
