Ingredients

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until combined. Press the mixture into the bottom of a greased 9×13 inch baking dish, ensuring it’s even and compact. Bake for 10 minutes, then remove from the oven and let it cool.
  • In another bowl, beat the softened cream cheese and sugar together until smooth. Add in the eggs one at a time, mixing well after each addition. Finally, mix in the vanilla extract.
  • Pour the cheesecake mixture over the cooled crust, spreading it evenly.
  • In a small bowl, combine the chopped peaches, brown sugar, and cinnamon. Mix well, then spoon the peach mixture over the cheesecake layer.
  • Return the baking dish to the oven and bake for an additional 30-35 minutes or until the cheesecake is set and the edges are lightly golden.
