  • 1 ½ cups of all-purpose flour
  • 1 cup of old-fashioned oats
  • ½ cup of brown sugar
  • ½ teaspoon of cinnamon
  • ½ teaspoon of baking powder
  • ½ cup of cold unsalted butter, cubed
  • 1 large egg

  • Instructions

  • Preheat the Oven: Start by preheating your oven to 350°F (175°C).
  • Prepare the Peach Filling: In a large bowl, combine the diced peaches, lemon juice, granulated sugar, cornstarch, and vanilla extract. Gently toss everything together and set aside.
  • Make the Crust and Crumble Mixture: In another bowl, mix together the flour, oats, brown sugar, cinnamon, and baking powder. Add the cubed butter and work it into the dry ingredients until it resembles coarse crumbs. Stir in the egg until just combined.
  • Press the Crust into a Pan: Take about two-thirds of this mixture and press it into the bottom of a greased 9×9-inch baking pan.
  • Add the Peach Filling: Spread the peach filling evenly over the crust.
  • Sprinkle Remaining Crumble on Top: Sprinkle the rest of the crumble mixture on top of the peach layer.
  • Bake the Bars: Place your pan in the oven and bake for 30-35 minutes, until the top is golden brown and filling is bubbly.
