1 ½ cups All-purpose flour
½ cup Unsalted butter, cold and cubed
1 tablespoon Granulated sugar
½ teaspoon Salt
4–5 tablespoons Cold water
4–5 medium Peaches, sliced
½ teaspoon Cinnamon
1 tablespoon Lemon juice
Instructions
In a mixing bowl, combine the flour, sugar, and salt. Add the cold cubed butter and use a pastry cutter or fingers to mix until resembling coarse crumbs.
Gradually add cold water, one tablespoon at a time, mixing until the dough comes together.
Form the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
Slice the peaches and toss with sugar, lemon juice, and cinnamon in a mixing bowl. Set aside.
Preheat your oven to 400°F (200°C).
On a floured surface, roll out the dough into a 12-inch circle.
Transfer the rolled-out dough to a parchment-lined baking sheet. Spoon the peach mixture into the center, leaving about 2 inches of border. Fold the edges of the dough over the peaches.
Brush the crust with a little water or milk and sprinkle with additional sugar.
Bake for 35-40 minutes, or until the crust is golden brown and the peaches are bubbling.
Let cool for about 10 minutes before slicing and serving.
