  • 1 tablespoon Granulated sugar
  • ½ teaspoon Salt
  • 45 tablespoons Cold water
  • 45 medium Peaches, sliced
  • ½ teaspoon Cinnamon
  • 1 tablespoon Lemon juice

  • Instructions

  • In a mixing bowl, combine the flour, sugar, and salt. Add the cold cubed butter and use a pastry cutter or fingers to mix until resembling coarse crumbs.
  • Gradually add cold water, one tablespoon at a time, mixing until the dough comes together.
  • Form the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  • Slice the peaches and toss with sugar, lemon juice, and cinnamon in a mixing bowl. Set aside.
  • Preheat your oven to 400°F (200°C).
  • On a floured surface, roll out the dough into a 12-inch circle.
  • Transfer the rolled-out dough to a parchment-lined baking sheet. Spoon the peach mixture into the center, leaving about 2 inches of border. Fold the edges of the dough over the peaches.
  • Brush the crust with a little water or milk and sprinkle with additional sugar.
  • Bake for 35-40 minutes, or until the crust is golden brown and the peaches are bubbling.
