2 cups fresh mango
1 cup sugar
3 tablespoons cornstarch
1 tablespoon lemon juice
1 teaspoon vanilla extract
1 pre-made pie crust
1/2 teaspoon cinnamon (optional)
1 tablespoon fresh mint (optional)
Almond extract (optional)
Whipped cream (for serving)
Fresh mint leaves (for garnish)
Chopped nuts (for garnish)
Instructions
Start by washing and peeling the peaches and mangos. Remove the pits and then chop the fruit into bite-sized pieces.
In a large mixing bowl, combine the chopped peaches and mangoes. Add the sugar, cornstarch, lemon juice, and vanilla extract. Toss gently and let it sit for 10-15 minutes.
If using a pre-made crust, unfold it and place it in a pie dish; if making your own crust, roll it out and fit it into the dish.
Pour the filling into the pie crust and dot it with small pieces of butter if desired.
If using a top crust, place it over the filling, crimp the edges, and cut slits for steam to escape. Brush with egg wash.
