Instructions
Prepare the Peach Filling: In a bowl, combine the diced peaches, sugar, cinnamon, and optional nutmeg and vanilla extract. Toss to combine and let it sit while you prepare the pastry.
Preheat Your Oven: Preheat your oven to 400°F (200°C) and line a muffin tin with paper liners.
