4 ripe peaches, diced
1 medium red onion, finely chopped
1–2 jalapeño peppers, seeds removed and finely chopped
1/4 cup fresh cilantro, chopped
Juice of 2 limes
1/2 teaspoon salt (or to taste)
1/2 teaspoon black pepper (or to taste)
1 tablespoon honey (optional for extra sweetness)
Instructions
Wash the peaches thoroughly under cold water, slice them in half, remove the pit, and dice the flesh into small cubes.
Finely chop the red onion and jalapeños. If you prefer a milder salsa, make sure to remove the seeds and membranes from the jalapeños before chopping.
In a medium-sized mixing bowl, combine the diced peaches, chopped onion, jalapeños, and cilantro. Gently toss them together to maintain the integrity of the peaches.
Squeeze the juice from two fresh limes over the mixture, then season with salt and pepper. Drizzle in a tablespoon of honey for extra sweetness, if desired.
