  • 4 cups fresh peaches, peeled and sliced
  • 2 tablespoons cornstarch
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice

  • Instructions

  • In a mixing bowl, combine the all-purpose flour, sugar, and salt. Add the chilled butter and mix until the mixture resembles coarse crumbs.
  • Gradually add ice water, mixing until the dough comes together. Form it into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  • In a bowl, combine the sliced peaches, sugar, lemon juice, and cornstarch. Toss gently to coat the peaches evenly.
  • Let it sit for about 15 minutes to allow the flavors to meld and the juices to thicken slightly.
  • In a mixing bowl, whip the heavy cream until soft peaks form. Gradually add the powdered sugar, vanilla extract, and almond extract, if using, and continue to whip until stiff peaks form.
  • Preheat your oven to 375°F (190°C).
  • Roll out the chilled pie dough on a floured surface and fit it into a 9-inch pie pan. Trim any excess dough hanging over the edges.
  • Pour the peach filling into the prepared crust, spreading it evenly.
  • Bake for 25-30 minutes or until the crust is golden brown and the peaches are bubbly.
