1 ½ cups all-purpose flour
½ cup unsalted butter, chilled and cut into cubes
1/4 cup granulated sugar
1/4 teaspoon salt
3–4 tablespoons ice water
1 cup heavy cream
1/2 cup powdered sugar
1 teaspoon vanilla extract
1/2 teaspoon almond extract (optional)
4 cups fresh peaches, peeled and sliced
2 tablespoons cornstarch
1/4 cup granulated sugar
1 tablespoon lemon juice
Instructions
In a mixing bowl, combine the all-purpose flour, sugar, and salt. Add the chilled butter and mix until the mixture resembles coarse crumbs.
Gradually add ice water, mixing until the dough comes together. Form it into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
In a bowl, combine the sliced peaches, sugar, lemon juice, and cornstarch. Toss gently to coat the peaches evenly.
Let it sit for about 15 minutes to allow the flavors to meld and the juices to thicken slightly.
In a mixing bowl, whip the heavy cream until soft peaks form. Gradually add the powdered sugar, vanilla extract, and almond extract, if using, and continue to whip until stiff peaks form.
Preheat your oven to 375°F (190°C).
Roll out the chilled pie dough on a floured surface and fit it into a 9-inch pie pan. Trim any excess dough hanging over the edges.
Pour the peach filling into the prepared crust, spreading it evenly.
Bake for 25-30 minutes or until the crust is golden brown and the peaches are bubbly.
Let it cool completely on a wire rack.
Once the pie has cooled, spread the whipped cream filling evenly over the top.
Refrigerate the pie for at least 2 hours before serving, allowing the flavors to meld.
