1 ½ cups all-purpose flour
½ cup unsalted butter, cold and cubed
¼ cup granulated sugar
1 large egg yolk
2–3 tablespoons cold water

1 cup almond flour
2 large eggs
1 teaspoon vanilla extract
2 tablespoons all-purpose flour
2–3 ripe pears, peeled, cored, and sliced
1 tablespoon lemon juice
Instructions
In a mixing bowl, combine the flour, sugar, and cold butter. Using a pastry cutter or your fingers, mix until the mixture resembles coarse crumbs. Add the egg yolk and cold water gradually, mixing until a dough forms. Wrap in plastic wrap and refrigerate for at least 30 minutes.
While the dough chills, preheat your oven to 350°F (175°C).
Once the dough is chilled, lightly flour a surface and roll it out to fit a 9-inch tart pan. Transfer the dough to the pan, pressing it into the edges. Trim any excess dough.
Prick the bottom of the crust with a fork to prevent bubbling. Bake for 15 minutes or until light golden. Remove from the oven and set aside to cool slightly.
In a clean bowl, cream together the softened butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the almond flour, vanilla extract, and all-purpose flour until just combined.
Spread the almond cream mixture evenly over the cooled crust. Arrange the sliced pears on top, overlapping them slightly for a beautiful presentation.
Return the tart to the oven and bake for another 25-30 minutes, or until the almond cream is set and lightly browned.
Once done, remove the tart from the oven and allow it to cool in the pan for about 15 minutes before transferring it to a wire rack to cool completely.
