  • ¼ cup granulated sugar
  • 1 large egg yolk
  • 23 tablespoons cold water
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • 1 cup almond flour
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons all-purpose flour
  • 23 ripe pears, peeled, cored, and sliced
  • 1 tablespoon lemon juice

  • Instructions

  • In a mixing bowl, combine the flour, sugar, and cold butter. Using a pastry cutter or your fingers, mix until the mixture resembles coarse crumbs. Add the egg yolk and cold water gradually, mixing until a dough forms. Wrap in plastic wrap and refrigerate for at least 30 minutes.
  • While the dough chills, preheat your oven to 350°F (175°C).
  • Once the dough is chilled, lightly flour a surface and roll it out to fit a 9-inch tart pan. Transfer the dough to the pan, pressing it into the edges. Trim any excess dough.
  • Prick the bottom of the crust with a fork to prevent bubbling. Bake for 15 minutes or until light golden. Remove from the oven and set aside to cool slightly.
  • In a clean bowl, cream together the softened butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the almond flour, vanilla extract, and all-purpose flour until just combined.
  • Spread the almond cream mixture evenly over the cooled crust. Arrange the sliced pears on top, overlapping them slightly for a beautiful presentation.
  • Return the tart to the oven and bake for another 25-30 minutes, or until the almond cream is set and lightly browned.
  • Once done, remove the tart from the oven and allow it to cool in the pan for about 15 minutes before transferring it to a wire rack to cool completely.
  • Slice the tart and serve at room temperature. Pair with whipped cream or vanilla ice cream for an extra treat!
