Savor a tender corned beef and cabbage made easy in a slow cooker. Perfect for family meals or any gathering, enjoy rich flavors in every bite!
Ingredients
Scale
4–5 lb corned beef brisket
1 onion, quartered
4 cloves garlic, minced
6–8 medium-sized potatoes, cut into chunks
1 small head of cabbage, cut into wedges
4 cups beef broth
1 tablespoon pickling spice
1 tablespoon mustard (optional)
Carrots, sliced (optional)
Red pepper flakes (optional)
Fresh herbs (like parsley or thyme, optional)
Chopped fresh parsley (for garnish)
Mustard or horseradish (for serving)
Instructions
Prepare the Slow Cooker: First, spritz your slow cooker with a bit of cooking spray or rub it down with some oil. This helps with easy cleanup later!
Layer the Ingredients: Start by placing the quartered onion and minced garlic at the bottom of the slow cooker.
Add the Beef: Place the corned beef brisket on top of the onion and garlic. If your brisket comes with a spice packet, sprinkle it all over the meat.
Pour in the Broth: Pour in the beef broth carefully, ensuring to cover the brisket at least halfway. Add the pickling spice if it wasn’t included in your corned beef package.
Layer with Veggies: Add the potatoes on one side of the brisket and the cabbage wedges around it. If you’re using carrots, add those too!
Set it and Forget it: Cover the slow cooker and set it on low for 8-10 hours, or high for 4-6 hours.
