4 chicken thighs (skinless and boneless)
2 cups of white rice
4 cups of chicken broth
1 tablespoon of olive oil
2 cloves of garlic
1 onion (chopped)

1 cup of fresh cilantro
1 jalapeño (seeded for less heat)
1/2 cup of mayonnaise
2 tablespoons of lime juice
1 teaspoon of salt
Instructions
Prepare the Rice: In a medium pot, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and garlic, sautéing until softened. Add the white rice and stir for a few minutes until lightly toasted. Pour in the chicken broth, season with salt, and bring to a boil. Once boiling, reduce the heat to low, cover, and let simmer for about 18 minutes or until the rice is fluffy and the liquid has been absorbed.
Cook the Chicken: While the rice cooks, season the chicken thighs with salt and pepper. In a large skillet, heat a bit more olive oil over medium-high heat. Once hot, add the chicken thighs.
