  • 2 cups of white rice
  • 4 cups of chicken broth
  • 1 tablespoon of olive oil
  • 2 cloves of garlic
  • 1 onion (chopped)
  • Salt and pepper
  • 1 cup of fresh cilantro
  • 1 jalapeño (seeded for less heat)
  • 1/2 cup of mayonnaise
  • 2 tablespoons of lime juice
  • 1 teaspoon of salt

  • Instructions

  • Prepare the Rice: In a medium pot, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and garlic, sautéing until softened. Add the white rice and stir for a few minutes until lightly toasted. Pour in the chicken broth, season with salt, and bring to a boil. Once boiling, reduce the heat to low, cover, and let simmer for about 18 minutes or until the rice is fluffy and the liquid has been absorbed.
  • Cook the Chicken: While the rice cooks, season the chicken thighs with salt and pepper. In a large skillet, heat a bit more olive oil over medium-high heat. Once hot, add the chicken thighs. Cook each side for about 6-7 minutes until golden brown and fully cooked. Remove the chicken from the skillet and let it rest for a few minutes before slicing.
  • Make the Green Sauce: In a food processor, combine cilantro, jalapeño, mayonnaise, lime juice, and salt. Blend until smooth and creamy. Adjust seasoning to taste.
  • Assemble and Serve: Fluff the cooked rice with a fork. Place a portion of rice on each plate, top with sliced chicken, and drizzle generously with the green sauce. Garnish with fresh cilantro and lime wedges for a vibrant touch.
