Instructions
Prepare the Beets: Trim the beet tops and tails, leaving about an inch of stem to prevent bleeding. Rinse the beets under cool water to remove dirt.
Boil the Beets: Place the beets in a large pot and cover with water. Bring to a boil, then reduce heat and simmer for about 30-40 minutes until tender.
Cool and Peel: Once cooked, drain the beets and allow them to cool. Wearing gloves, peel the skin off.
Slice the Beets: Cut the beets into slices or quarters, depending on your preference.
Make the Brine: In a saucepan, combine apple cider vinegar, water, sugar, salt, cloves, peppercorns, and bay leaf. Bring the mixture to a simmer over medium heat.
Combine Beets and Brine: Pack the sliced beets into sterilized jars, pour the hot brine over the beets, ensuring they are fully submerged.
Seal and Cool: Wipe the rims of the jars and seal them tightly. Allow the jars to cool completely before refrigerating.
Pickling Time: Let the pickled beets sit for at least 24 hours before tasting.
