  • 1 red bell pepper
  • 1 green bell pepper
  • 1 medium red onion
  • 1/4 cup olive oil
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 2 cloves garlic (minced)
  • 1 teaspoon ground ginger
  • Salt and pepper to taste
  • Optional: Red pepper flakes or sliced jalapeños, fresh herbs like cilantro or basil, zucchini, cherry tomatoes, or mushrooms for variety
  • Fresh cilantro or parsley for garnishing
  • Lime wedges for serving

  • Instructions

  • In a large mixing bowl, combine olive oil, soy sauce, honey, minced garlic, ground ginger, salt, and pepper. Whisk until well blended.
  • Cut the chicken into bite-sized pieces and add them to the marinade. Mix until well-coated, cover, and refrigerate for at least 30 minutes.
  • Peel and core the pineapple, cutting it into chunks. Chop the red and green bell peppers and the red onion into similar-sized pieces.
  • Take skewers and thread the marinated chicken, pineapple, red onion, and bell peppers onto each skewer, alternating between ingredients.
  • Preheat the grill to medium-high heat. If using wooden skewers, soak them in water for about 30 minutes.
  • Place the skewers on the grill and cook for 12-15 minutes, turning occasionally, until chicken is cooked through and has nice grill marks.
