- 1 lb chicken thighs
- 1 cup fresh pineapple chunks
- 1/4 cup soy sauce
- 2 tablespoons honey
- 2 garlic cloves, minced
- 1 tablespoon fresh ginger, grated
- 1 tablespoon olive oil
- Salt and pepper, to taste
- Optional: bell peppers, red onions, zucchini, cherry tomatoes, crushed red pepper flakes
Instructions
- Prepare the marinade: In a medium bowl, whisk together soy sauce, honey, minced garlic, grated ginger, and olive oil until well blended.
- Marinate the chicken: Cut the chicken thighs into bite-sized pieces and add them to the marinade. Cover and refrigerate for at least 30 minutes, or up to 4 hours for maximum flavor.
- Skewer the ingredients: Once marinated, thread the chicken and pineapple chunks (and any additional veggies you’re using) onto the skewers. Alternate between pineapple and chicken for a colorful presentation.
- Preheat the grill: Heat your grill to medium-high heat. Lightly oil the grates to prevent sticking.
- Grill the kabobs: Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally until the chicken is fully cooked and has nice grill marks. The internal temperature should reach 165°F (75°C).
