  • 1 cup fresh pineapple chunks
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 2 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated

  • Salt and pepper, to taste
  • Optional: bell peppers, red onions, zucchini, cherry tomatoes, crushed red pepper flakes

Instructions

  • Prepare the marinade: In a medium bowl, whisk together soy sauce, honey, minced garlic, grated ginger, and olive oil until well blended.
  • Marinate the chicken: Cut the chicken thighs into bite-sized pieces and add them to the marinade. Cover and refrigerate for at least 30 minutes, or up to 4 hours for maximum flavor.
  • Skewer the ingredients: Once marinated, thread the chicken and pineapple chunks (and any additional veggies you’re using) onto the skewers. Alternate between pineapple and chicken for a colorful presentation.
