  • Prepare the pineapple: Start by peeling and coring a medium-sized pineapple. Cut it into small, bite-sized chunks.
  • Make the batter: In a large mixing bowl, combine the flour, sugar, baking powder, and salt. Whisk these dry ingredients together until well mixed. In a separate bowl, beat the egg and then add milk and vanilla extract (if using) before mixing it all together.
  • Combine: Pour the wet ingredients into the dry flour mixture, stirring until just combined. Be careful not to overmix; small lumps are okay.
