  • 1 cup packed brown sugar
  • 1 can (20 oz) sliced pineapple in syrup (drained, juice reserved)
  • Maraschino cherries (about 10-12 cherries)
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup whole milk
  • 2 large eggs
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp vanilla extract

  • Instructions

  • 1. Preheat your oven to 350°F (175°C). In a round 9-inch cake pan, melt the butter over low heat. Once melted, sprinkle the brown sugar evenly over the melted butter.
  • 2. Arrange the pineapple slices on top of the sugar mixture in a decorative pattern. Place a cherry in the center of each pineapple slice.
  • 3. In a large mixing bowl, whisk together flour, granulated sugar, baking powder, baking soda, and salt. In another bowl, combine the milk, eggs, vanilla extract, and 1/4 cup of the reserved pineapple juice. Add the wet ingredients to the dry ingredients, mixing until just combined.
  • 4. Pour the batter over the arranged pineapple slices in the cake pan, smoothing it out with a spatula.
  • 5. Bake in the preheated oven for about 35-40 minutes, or until a toothpick inserted in the center comes out clean.
  • 6. Let the cake cool in the pan for about 10 minutes. Run a knife around the edges to loosen it, place a serving plate over the cake pan and quickly invert it.
