2 cups of all-purpose flour
1 ½ cups of granulated sugar
½ cup of unsalted butter, softened
2 large eggs
1 cup of milk
2 teaspoons of baking powder
½ teaspoon of salt
1 cup of crushed pistachios
1 cup of mascarpone cheese
1 teaspoon of vanilla extract
¼ cup of powdered sugar (for frosting)
Instructions
Preheat your oven to 350°F (175°C).
Prepare your baking pans by greasing two 9-inch round cake pans and lining the bottoms with parchment paper.
In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
In another bowl, whisk together the flour, baking powder, and salt. Gently add this dry mixture to the wet ingredients, alternating with the milk, starting and ending with the flour.
Fold in the crushed pistachios gently until just combined.
Divide the batter evenly between the two prepared pans and smooth the tops.
Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.
Let the cakes cool in the pans for about 10 minutes before transferring to wire racks to cool completely.
Prepare the mascarpone frosting by combining the mascarpone cheese and powdered sugar in a mixing bowl, mixing until smooth.
Once the cakes are completely cool, place one layer on your serving platter, slather on the mascarpone frosting, and place the second layer on top. Ice the top and sides with more frosting.
Top with the remaining crushed pistachios.
