Ingredients

  • 2 cups of heavy cream
  • 1/2 cup of powdered sugar
  • 1 teaspoon of vanilla extract
  • 1 cup of dark chocolate (for ganache)
  • 1/2 cup of heavy cream (for ganache)
  • A pinch of salt (optional)
  • Ground cardamom (optional)
  • Chopped pistachios for garnish (optional)
  • Fresh mint leaves for garnish (optional)
  • Sliced strawberries for garnish (optional)
  • Chocolate shavings for garnish (optional)

  • Instructions

  • Begin by placing your raw pistachios in a food processor. Pulse until finely ground.
  • In a mixing bowl, combine the ground pistachios, 2 cups of heavy cream, powdered sugar, and vanilla extract. Whip until soft peaks form.
  • Transfer the mousse into a serving dish or individual cups. Cover with plastic wrap and refrigerate for at least an hour to set.
  • For the ganache, heat 1/2 cup of heavy cream until it just begins to simmer. Pour over chopped dark chocolate in a bowl and stir until smooth.
  • Once the ganache has cooled slightly, pour it over the chilled pistachio mousse. Decorate with your choice of garnishes.
