  • 1/2 cup unsalted butter
  • 1 cup sugar
  • 1 1/2 cups flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 eggs
  • 2 tsp vanilla extract
  • 1/2 tsp cinnamon (optional)
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/2 tsp almond extract (optional)
  • Powdered sugar for garnish
  • Fresh mint leaves for garnish
  • Whipped cream for serving

  • Instructions

  • Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  • In a skillet over medium heat, melt 1/4 cup of butter and add 1/2 cup of sugar. Stir until the mixture is bubbly and slightly caramelized, about 2-3 minutes.
  • Pour the caramel mixture into the bottom of your prepared cake pan, and arrange the sliced plums on top, cut side up.
  • In a medium bowl, cream the remaining 1/4 cup of softened butter with the remaining 1/2 cup of sugar until light and fluffy.
  • Beat in the eggs one at a time, adding the vanilla extract with the last egg.
  • In another bowl, mix the flour, baking powder, and salt. Gradually add this dry mixture to the creamed butter mixture, mixing until just combined.
  • Carefully pour the batter over the plums in the cake pan, smoothing the top with a spatula.
  • Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  • Let the cake cool in the pan for about 10 minutes, then invert onto a serving plate.
  • Serve warm or at room temperature with a sprinkle of powdered sugar or a dollop of whipped cream.
