4–5 plums, pitted and sliced
1/2 cup unsalted butter
1 cup sugar
1 1/2 cups flour
1 tsp baking powder
1/2 tsp salt
2 eggs
2 tsp vanilla extract
1/2 tsp cinnamon (optional)
1/2 cup chopped walnuts or pecans (optional)
1/2 tsp almond extract (optional)
Powdered sugar for garnish
Fresh mint leaves for garnish
Whipped cream for serving
Instructions
Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
In a skillet over medium heat, melt 1/4 cup of butter and add 1/2 cup of sugar. Stir until the mixture is bubbly and slightly caramelized, about 2-3 minutes.
Pour the caramel mixture into the bottom of your prepared cake pan, and arrange the sliced plums on top, cut side up.
In a medium bowl, cream the remaining 1/4 cup of softened butter with the remaining 1/2 cup of sugar until light and fluffy.
Beat in the eggs one at a time, adding the vanilla extract with the last egg.
In another bowl, mix the flour, baking powder, and salt. Gradually add this dry mixture to the creamed butter mixture, mixing until just combined.
Carefully pour the batter over the plums in the cake pan, smoothing the top with a spatula.
Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.
Let the cake cool in the pan for about 10 minutes, then invert onto a serving plate.
Serve warm or at room temperature with a sprinkle of powdered sugar or a dollop of whipped cream.
