1 ½ cups graham cracker crumbs
½ cup unsalted butter, melted
¼ cup granulated sugar
16 oz cream cheese, softened
1 cup pumpkin puree
¾ cup granulated sugar
3 large eggs
1 tsp vanilla extract
1 tsp ground cinnamon
½ tsp ground nutmeg
¼ tsp ground ginger
½ tsp salt
Instructions
Preheat your oven to 325°F (160°C) and line a 9×13 inch baking dish with parchment paper.
In a medium bowl, mix the graham cracker crumbs, melted butter, and sugar until well combined. Press this mixture into the bottom of the baking dish and bake for 10 minutes.
In a large bowl, beat the softened cream cheese until smooth. Gradually add in the sugar, then mix in the pumpkin puree, eggs, vanilla, spices, and salt until smooth.
Pour the filling over the cooled crust and bake for 30-35 minutes until the center is set but still has a slight jiggle.
Let it cool in the oven with the door cracked for an hour, then refrigerate for at least 4 hours.
Once chilled, lift the bars using the parchment overhang, cut into squares, and serve.
