  • 3 large eggs

  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp ground ginger
  • ½ tsp salt

  • Instructions

  • Preheat your oven to 325°F (160°C) and line a 9×13 inch baking dish with parchment paper.
  • In a medium bowl, mix the graham cracker crumbs, melted butter, and sugar until well combined. Press this mixture into the bottom of the baking dish and bake for 10 minutes.
  • In a large bowl, beat the softened cream cheese until smooth. Gradually add in the sugar, then mix in the pumpkin puree, eggs, vanilla, spices, and salt until smooth.
  • Pour the filling over the cooled crust and bake for 30-35 minutes until the center is set but still has a slight jiggle.
  • Let it cool in the oven with the door cracked for an hour, then refrigerate for at least 4 hours.
  • Once chilled, lift the bars using the parchment overhang, cut into squares, and serve.
