  • Instructions

  • Start by cooking the pasta according to the package instructions. Ensure it’s al dente for the best texture.
  • In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  • Stir in the pumpkin puree, followed by the dried rosemary, and season with salt and pepper to taste. Mix well and allow it to heat through, about 3-4 minutes.
  • Once the pasta is ready, reserve a cup of pasta water, then drain the rest.
  • Add the drained pasta to the skillet with the pumpkin sauce. Toss to coat the pasta evenly, adding reserved pasta water gradually until the desired creamy consistency is achieved.
  • Remove the skillet from the heat and fold in the crumbled feta cheese until well combined.
