Ingredients
Scale
1 cup pumpkin puree
1 cup granulated sugar
1/2 cup brown sugar
1/2 cup vegetable oil
3 large eggs
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
1/2 cup Nutella
Optional: chopped nuts, chocolate chips, spices
Instructions
Preheat your oven to 350°F (175°C). Prepare a 9-inch round cake pan by greasing it or lining it with parchment paper.
In a large bowl, combine the pumpkin puree, granulated sugar, brown sugar, and vegetable oil. Whisk these ingredients until well combined. Then, add the eggs one at a time, beating well after each addition.
In a separate bowl, sift together the all-purpose flour, baking powder, baking soda, ground cinnamon, nutmeg, and salt.
Gradually add the dry mixture into the pumpkin mixture, stirring until just combined. Be careful not to overmix; a few lumps are acceptable!
In a small bowl, warm the Nutella slightly in the microwave (about 10-15 seconds) until it’s pourable. Take about one-third of the batter and place it in a separate bowl. Stir in the warmed Nutella until well combined.
In your prepared pan, pour in about half of the pumpkin batter. Next, spoon dollops of the Nutella batter over the pumpkin batter, and then add the remaining pumpkin batter on top. Finally, swirl a knife through the batters to create a marbled effect.
Bake the cake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.
Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely before serving.
