1 cup Pumpkin Puree
1 cup Heavy Cream
3/4 cup Granulated Sugar
2 large Eggs
1/2 cup Brown Sugar
1 tsp Cinnamon
1/2 tsp Nutmeg
1/4 tsp Ginger
1 tsp Bourbon Vanilla Extract
1/4 tsp Salt
Instructions
Preheat the Oven to 350°F (175°C).
In a medium bowl, whisk together the pumpkin puree, heavy cream, granulated sugar, brown sugar, eggs, spices, bourbon vanilla, and salt until smooth and combined.
Divide the mixture evenly into eight ramekins, filling each about three-quarters full.
Place the ramekins in a large baking dish, and fill the dish with hot water until it reaches halfway up the sides of the ramekins. Bake for about 25-30 minutes, or until the filling is set but still has a slight jiggle in the center.
Remove the ramekins from the water bath and cool them to room temperature, then refrigerate for at least two hours or overnight.
Before serving, sprinkle a thin layer of granulated sugar on top of each custard. Using a kitchen torch, carefully caramelize the sugar until golden brown and bubbly.
Let the bruleed tops cool for a minute before serving. Garnish as desired and enjoy!
