1 cup (200g) brown sugar
1/2 cup (100g) granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 1/2 cups (180g) all-purpose flour
1 cup (90g) rolled oats
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
Instructions
Preheat your oven: Set your oven to 350°F (175°C) and line a baking sheet with parchment paper.
Mix the wet ingredients: In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Add in the pumpkin puree, eggs, and vanilla extract, mixing until combined.
Combine dry ingredients: In a separate bowl, whisk together the flour, rolled oats, baking soda, cinnamon, nutmeg, and salt. Ensure they’re well mixed to avoid clumping.
Combine wet and dry mixtures: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Avoid over-mixing—this will keep your cookies tender.
