1 ½ cups graham cracker crumbs
½ cup unsalted butter, melted
¼ cup granulated sugar
16 ounces cream cheese, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 cup sour cream

Instructions
Preheat your oven to 325°F (160°C). In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until it resembles wet sand. Press this mixture firmly into the bottom of a lined 9×9 inch baking pan. Bake for 10 minutes, then set aside to cool.
In a large bowl, beat together the softened cream cheese and sugar until smooth and creamy. Add in the eggs one by one, mixing well after each addition. Then, add the vanilla extract and sour cream, continuing to mix until everything is well combined.
Divide the cheesecake filling into separate bowls based on how many colors you plan to use. For example, if you’re using five colors, split the filling into five bowls.
In each bowl, add a few drops of food coloring and mix until you achieve your desired shades. You can go for pastel or vibrant colors—whatever tickles your fancy!
Now comes the fun part! Begin by adding spoonfuls of each colored cheesecake mixture onto the cooled crust. Alternate between colors, creating a beautiful pattern. Once all the filling is in the pan, use a toothpick or knife to swirl the colors together gently. Be careful not to over-mix!
Place the baking pan in the preheated oven and bake for 25 to 30 minutes, or until the edges are set, but the center still has a slight jiggle. Remove from the oven and let it cool at room temperature before refrigerating for at least 4 hours, preferably overnight.
