1 large egg (for filling)
1 teaspoon vanilla extract (for filling)
1/2 cup fresh raspberries
1 cup heavy whipping cream
1/4 cup powdered sugar (for frosting)
1 teaspoon vanilla extract (for frosting)
Instructions
Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
Add the eggs one at a time, beating well after each addition. Incorporate the vanilla extract.
In a separate bowl, mix together the flour, baking powder, and salt. Gradually add this mixture to the creamed mixture, alternating with milk, and mix until just combined.
Divide the cupcake batter evenly into the prepared muffin tin, filling each liner about halfway.
In another bowl, mix the softened cream cheese with granulated sugar until smooth. Add the egg and vanilla extract, mixing until well combined. Gently fold in the raspberries.
Drop a spoonful of the cheesecake filling into the center of each filled cupcake.
Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the cupcake comes out clean.
Let the cupcakes cool completely in the tin before transferring them to a wire rack.
For the frosting, whip the heavy cream and add powdered sugar and vanilla extract until stiff peaks form. Frost each cupcake generously.
