Ingredients

  • 4 cups of all-purpose flour
  • 1/2 cup of granulated sugar
  • 1 teaspoon of salt
  • 2¼ teaspoons of active dry yeast
  • 1 cup of whole milk
  • 1/2 cup of unsalted butter, melted
  • 3 large eggs
  • 1 cup of fresh or frozen raspberries
  • 1 teaspoon of vanilla extract

  • Instructions

  • In a small saucepan, gently heat the milk until it’s warm (not hot!). Sprinkle the yeast over the milk and let it sit for about 5-10 minutes until it becomes frothy.
  • In a large bowl, whisk together the flour, sugar, and salt, making sure everything is well combined.
  • In a separate bowl, beat the eggs and mix in the melted butter and vanilla extract. Pour this mixture and the frothy yeast into the dry ingredients.
  • Stir with a wooden spoon until a rough dough forms. Then transfer to a floured surface and knead for about 10 minutes until smooth and elastic.
  • Place the kneaded dough in a greased bowl, cover it with a cloth, and let it rise in a warm place for about 1-1.5 hours, or until it has doubled in size.
  • If using frozen raspberries, thaw them and drain any excess juice. Fresh berries can be used directly, but gently pat them dry to avoid excess moisture.
  • Once your dough has risen, punch it down gently and place it on a floured surface. Roll it out into a rectangular shape (about 10×15 inches). Spread a layer of raspberries evenly over the dough.
  • Starting from one long side, carefully roll the dough into a tight log. Pinch the edges to seal it and optionally twist the log to create a swirl pattern.
  • Cut the rolled log in half lengthwise and twist the two sections around each other for a beautiful design if desired.
  • Place the shaped loaf in a greased loaf pan, cover it again, and let it rise for another 30 minutes.
  • Preheat your oven to 350°F (175°C). Bake for about 30-35 minutes until golden brown and sound hollow when tapped.
  • Once baked, let the loaf cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
