1 cup raspberry puree
1 cup brewed coffee
24 ladyfinger cookies

Instructions
Make the Raspberry Puree: If using fresh raspberries, mash them gently with a fork, or whiz them up in a blender for a smoother texture. Strain if desired to remove seeds. If you're using frozen, thaw them first to release their juices.
Prepare the Cream Mixture: In a mixing bowl, combine the mascarpone, powdered sugar, and vanilla extract. Using a hand mixer, blend until smooth. In another bowl, whip the heavy cream until you reach soft peaks. Gently fold the whipped cream into the mascarpone mixture until it’s all one beautiful swirly mess.
Assemble the Layers: Dip each ladyfinger, one by one, into the brewed coffee, allowing them to soak for just a couple of seconds—don’t soak them too long, or they’ll disintegrate! Arrange them in a single layer in a 9×9 inch dish.
Add the Raspberry Puree: Spread half of the raspberry puree evenly over the ladyfingers. Then add half of your mascarpone mixture, smoothing it out gently. Repeat with another layer of dipped ladyfingers, the remaining raspberry puree, and finally, top it all with the rest of the mascarpone mixture.
Refrigerate: Cover the dish with plastic wrap and let it chill in the fridge for at least 4 hours, or overnight if you can! This helps set everything and allows the flavors to marry beautifully.
