1/2 cup Unsalted Butter
1 cup Granulated Sugar
1/2 cup Brown Sugar
2 Large Eggs
1 tsp Vanilla Extract
1 box Red Velvet Cake Mix
1/4 cup Unsweetened Cocoa Powder
1/2 tsp Salt
8 oz Cream Cheese
1/4 cup Granulated Sugar (for cheesecake layer)
1 Large Egg (for cheesecake layer)
1 tsp Vanilla Extract (for cheesecake layer)
Instructions
Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
In a medium saucepan over low heat, melt the unsalted butter. Remove from heat and let cool slightly.
In a mixing bowl, combine both sugars. Pour in the melted butter and mix until well combined.
Add in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
In another bowl, whisk together the cake mix, cocoa powder, and salt. Gradually add this to the wet ingredients and stir until just combined.
In a separate bowl, beat the cream cheese with sugar until smooth. Add in the egg and vanilla, mixing until well combined.
Pour half of the brownie batter into the prepared pan. Spread the cheesecake layer on top, followed by the remaining brownie batter. Swirl gently with a knife.
Bake for 30-35 minutes or until a toothpick comes out clean.
Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
