1 cup whole milk, warm

1/2 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon red food coloring
For the Cinnamon Filling:
1/2 cup brown sugar, packed
2 tablespoons ground cinnamon
1/4 cup unsalted butter, softened
For the Cream Cheese Frosting:
8 oz cream cheese, softened
1/4 cup unsalted butter, softened
2 cups powdered sugar
1 teaspoon vanilla extract
Instructions
Start by warming the milk to about 110°F (it should feel warm to the touch but not hot). In a large mixing bowl, combine the warm milk, granulated sugar, and yeast. Let it sit for about 5-10 minutes until it becomes frothy. This step is crucial as it activates the yeast!
Once the yeast mixture is frothy, add in the melted butter, eggs, cocoa powder, vanilla extract, and red food coloring. Mix until everything is well-combined.
In another bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing it until a dough starts to form. The dough should pull away from the sides of the bowl but still be slightly sticky.
Turn the dough onto a floured surface and knead it for about 5-7 minutes until it’s smooth and elastic. Shape it into a ball and place it in a greased bowl, covering it with a clean kitchen towel. Allow it to rise in a warm place for about 1 to 1.5 hours, or until it doubles in size.
While the dough is rising, mix together the brown sugar, cinnamon, and softened butter in a small bowl until well combined. This will create a delicious filling that you’ll spread on the rolled dough.
Once the dough has risen, punch it down gently to release the air. On a floured surface, roll the dough into a rectangle about 1/4 inch thick. Spread the cinnamon filling evenly over the surface of the dough.
Starting from the long edge, roll the dough tightly into a log. Cut the log into 12 equal pieces and place them in a greased baking dish.

While the rolls are baking, prepare the cream cheese frosting. In a bowl, beat together the softened cream cheese and butter until creamy. Gradually add the powdered sugar and vanilla extract, mixing until smooth and fluffy.
