1 package (3 oz) red raspberry Jello
1 package (3 oz) blueberry Jello
1 can (14 oz) coconut milk (or whipped cream for a different texture)
2 cups of boiling water
1 cup cold water for each Jello flavor
Clear plastic cups (about 5 oz size for individual servings)
Fresh berries for garnish (optional)
Whipped cream (optional for topping)
Instructions
Start by preparing the red raspberry Jello. In a mixing bowl, dissolve the raspberry Jello powder in 1 cup of boiling water. Stir it well until fully dissolved.
Once dissolved, add 1 cup of cold water to the mixture. Stir to combine, and then carefully pour the mixture into clear plastic cups, filling them about a third of the way full.
Place the cups in the refrigerator and let them chill for about 30-60 minutes, or until the Jello is set.
While the raspberry layer is chilling, it’s time to prepare the white coconut layer. In a clean bowl, mix the coconut milk (or whipped cream) with any sweetener if desired.
Once the raspberry layer has set, take the cups out of the refrigerator and pour the coconut mixture over the raspberry layer, filling the cups about two-thirds full.
Return the cups to the refrigerator and chill for another 30 minutes until the coconut layer is set.
Next, move on to the blueberry layer. Just like the raspberry layer, dissolve the blueberry Jello powder in 1 cup of boiling water and stir until fully dissolved. Add 1 cup of cold water to the mixture and stir.
With the coconut layer set, carefully pour the blueberry Jello mixture on top, filling the cups to the brim. Return the cups to the refrigerator one last time and chill until completely set, about 1-2 hours.
Once all layers are fully set, garnish each cup with a dollop of whipped cream and fresh berries for an extra touch of flair. Serve them chilled.
