1 cup cooked corned beef
½ cup Swiss cheese, shredded
½ cup sauerkraut, drained and chopped
1 tsp garlic powder
1 tsp onion powder
1 cup breadcrumbs
2 large eggs
Vegetable oil (for frying)
Instructions
Chop the cooked corned beef into small pieces. In a mixing bowl, combine the chopped corned beef, shredded Swiss cheese, sauerkraut, garlic powder, onion powder, and one egg. Mix until all ingredients are well incorporated.
Form the mixture into balls, about 1 inch in diameter. You should yield around 20-24 balls.
In a separate bowl, beat the remaining egg. Dip each ball into the egg, allowing any excess to drip off, and then roll them in breadcrumbs until fully coated.
Heat about 2 inches of vegetable oil in a deep frying pan over medium heat. Fry the Reuben Balls in batches until golden brown on all sides, approximately 3-4 minutes.
Transfer the fried Reuben Balls to a paper towel-lined plate to drain excess oil.
For the spicy Thousand Island dip, mix mayonnaise, ketchup, pickle relish, hot sauce, and a pinch of cayenne.
Serve the Reuben Balls hot with the spicy Thousand Island dip on the side.
