  • 1 cup cooked corned beef
  • ½ cup Swiss cheese, shredded
  • ½ cup sauerkraut, drained and chopped
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 cup breadcrumbs
  • 2 large eggs
  • Vegetable oil (for frying)

  • Instructions

  • Chop the cooked corned beef into small pieces. In a mixing bowl, combine the chopped corned beef, shredded Swiss cheese, sauerkraut, garlic powder, onion powder, and one egg. Mix until all ingredients are well incorporated.
  • Form the mixture into balls, about 1 inch in diameter. You should yield around 20-24 balls.
  • In a separate bowl, beat the remaining egg. Dip each ball into the egg, allowing any excess to drip off, and then roll them in breadcrumbs until fully coated.
  • Heat about 2 inches of vegetable oil in a deep frying pan over medium heat. Fry the Reuben Balls in batches until golden brown on all sides, approximately 3-4 minutes.
  • Transfer the fried Reuben Balls to a paper towel-lined plate to drain excess oil.
  • For the spicy Thousand Island dip, mix mayonnaise, ketchup, pickle relish, hot sauce, and a pinch of cayenne.
