  • 2 cups roasted apples, diced

  • Instructions

  • Preheat your oven to 350°F (175°C). Line a loaf pan with parchment paper or grease it with cooking spray.
  • Core and slice your apples into cubes. Spread them on a baking sheet, drizzle with a little olive oil, and roast for about 20-25 minutes or until they are tender and caramelized. Let them cool slightly.
  • In a large bowl, whisk together the flour, brown sugar, baking soda, baking powder, cinnamon, nutmeg, and salt until well combined.
  • In a separate bowl, whisk the melted butter, eggs, and vanilla extract until smooth.
  • Pour the wet mixture into the dry ingredients and gently stir until just combined. Avoid overmixing.
  • Carefully fold the roasted diced apples into the batter.
  • Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
