- 1 large store-bought or homemade flatbread (naan or pita works well)
- 2 large ripe peaches, halved and pitted
- 1 cup goat cheese or ricotta for smoothness and flavor
- 2 tablespoons honey for drizzling
- 1 tablespoon fresh thyme or basil, chopped (optional but recommended)
- 2 tablespoons olive oil for roasting and extra flavor
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Lay your peach halves on a baking sheet, cut side up. Drizzle with a tablespoon of olive oil and sprinkle with salt and pepper. Roast the peaches for 15-20 minutes until they are tender and slightly caramelized.
- While the peaches roast, prepare your flatbread. Place it on another baking sheet and brush with the remaining olive oil.
- Once the peaches are done roasting, spread the goat cheese or ricotta evenly over the flatbread.
- Slice the roasted peaches and arrange them on top of the cheese.
- Drizzle the honey over the top of the peaches and cheese. Sprinkle the chopped herbs on top.
- Place the assembled flatbread back in the oven and bake for an additional 10-12 minutes, until the edges are crisp and the cheese is warm.
- Let the flatbread cool for a minute, slice into portions, and serve warm.
