1 bunch of radishes (about 1 lb)
2 tablespoons of olive oil
Salt and pepper to taste
4 tablespoons of unsalted butter (softened)
2 anchovy fillets (packed in oil)
1 tablespoon of fresh parsley (chopped)
1 tablespoon of fresh chives (chopped)
1 teaspoon of lemon juice
Instructions
Preheat your oven to 450°F (230°C).
Trim the tops and tails of the radishes, rinse them, and pat them dry.
Place the radishes on a baking sheet and drizzle with olive oil, salt, and pepper, tossing until evenly coated.
Roast the radishes for about 20-25 minutes or until they are golden brown and fork-tender, tossing halfway through.
While the radishes are roasting, mix the softened butter, chopped anchovies, parsley, chives, and lemon juice in a small bowl until well combined.
Once the radishes are done, toss them with the anchovy herb butter right before serving.
