4 large red bell peppers
1 medium onion, diced
3 cloves garlic, minced
4 cups vegetable broth
1 cup gouda cheese, shredded
2 tablespoons olive oil
Salt and black pepper to taste
1 tablespoon balsamic vinegar (optional)
Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Slice your red bell peppers in half and remove the seeds. Place them cut side down on the prepared baking sheet. Roast in the oven for 25-30 minutes until charred.
Heat olive oil in a large pot over medium heat. Add diced onion and sauté for about 5 minutes until soft.
Stir in minced garlic and cook for another minute until fragrant.
Remove roasted peppers from the oven, let them cool, then peel off the skin.
