2 medium sweet potatoes, peeled and cubed
1 cup cooked lentils (green or brown)
4 cups mixed salad greens (arugula, spinach, or kale)
1/4 cup red onion, thinly sliced
1/4 cup feta cheese or goat cheese (optional)
2 tbsp olive oil
1 tbsp balsamic vinegar
1 tsp Dijon mustard
Salt and pepper to taste
Instructions
Preheat your oven to 400°F (200°C).
Toss the sweet potatoes with olive oil. Spread the cubed sweet potatoes on a baking sheet, drizzle with 1 tablespoon of olive oil, and sprinkle a pinch of salt and pepper.
Roast the sweet potatoes for about 25-30 minutes, flipping them halfway through until they are golden brown and tender.
While the potatoes roast, prepare the lentils.
In a small bowl, whisk together the remaining olive oil, balsamic vinegar, Dijon mustard, salt, and pepper.
In a large salad bowl, combine the mixed greens, lentils, roasted sweet potatoes, and red onion. Drizzle over the dressing and gently toss to coat. Top with feta or goat cheese, if using.
