  • 4 boneless, skinless chicken breasts
  • 1 cup fresh spinach
  • 1/2 cup feta cheese, crumbled
  • 1/3 cup sun-dried tomatoes, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Optional: red pepper flakes, parsley or basil for garnish

  • Instructions

  • In a skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Toss in the spinach, cooking until wilted. Remove from heat and let cool slightly.
  • In a bowl, combine the sautéed spinach, feta cheese, sun-dried tomatoes, salt, and pepper. Mix to combine evenly.
  • Take each chicken breast and place it between two sheets of plastic wrap. Gently pound them to an even thickness, about 1/2 inch thick.
  • Lay a portion of the filling onto each pounded chicken breast and roll tightly from one end to the other, securing with toothpicks or kitchen twine.
  • In the same skillet, heat the remaining tablespoon of olive oil over medium-high heat. Add the rolled chicken and sear on all sides until golden brown, about 4-5 minutes per side.
  • Transfer the seared chicken to a baking dish and pour a bit of reserved chicken broth or a splash of white wine in the bottom of the dish. Bake in a preheated oven at 375°F (190°C) for 20-25 minutes or until cooked through.
  • Let the chicken rest for about 5 minutes before cutting. Serve with a sprinkle of fresh herbs.
