  • Preheat your oven to 200°F (93°C) and line two baking sheets with parchment paper.
  • In a clean mixing bowl, combine the egg whites and cream of tartar. Use an electric mixer or a stand mixer to whip them on medium speed until soft peaks form.
  • With the mixer running, slowly add the granulated sugar one tablespoon at a time until the mixture forms stiff, glossy peaks. Add the vanilla extract and rosewater along with food coloring if using.
  • Using a piping bag with a star or round tip, pipe small blobs or swirls onto the prepared baking sheets, leaving space between each dollop.
  • Place the trays in the oven and bake for about 1.5 to 2 hours until completely dry to the touch and easily removable from parchment.
  • Turn off the oven and leave the cookies inside to cool completely, then store in an airtight container.
