3 large egg whites
1/2 teaspoon cream of tartar
1 cup granulated sugar
1 teaspoon pure vanilla extract
1–2 teaspoons rosewater
Optional: Pink food coloring
Instructions
Preheat your oven to 200°F (93°C) and line two baking sheets with parchment paper.
In a clean mixing bowl, combine the egg whites and cream of tartar. Use an electric mixer or a stand mixer to whip them on medium speed until soft peaks form.
With the mixer running, slowly add the granulated sugar one tablespoon at a time until the mixture forms stiff, glossy peaks. Add the vanilla extract and rosewater along with food coloring if using.
Using a piping bag with a star or round tip, pipe small blobs or swirls onto the prepared baking sheets, leaving space between each dollop.
Place the trays in the oven and bake for about 1.5 to 2 hours until completely dry to the touch and easily removable from parchment.
Turn off the oven and leave the cookies inside to cool completely, then store in an airtight container.
