2 pieces salmon fillets (around 6 oz each)
1 cup coconut milk
1 cup jasmine rice
1 large mango (diced)
1 small red onion (diced)
2 tablespoons cilantro (chopped)
Juice from 1 lime
Salt and pepper (to taste)
Olive oil (for cooking)
Instructions
Prepare the Rice: Rinse jasmine rice under cold water until it runs clear, then combine with coconut milk and water in a pot. Boil, reduce heat, cover, and cook for about 15 minutes until tender.
Cook the Salmon: Heat olive oil in a skillet, season salmon with salt and pepper, cook skin-side down for 4-5 minutes until crispy, then flip and cook for another 3-4 minutes.
Make the Mango Salsa: Mix diced mango, red onion, cilantro, lime juice, and salt in a bowl.
