Savor this comforting Salmon Chowder Soup recipe perfect for food lovers seeking a hearty dish Quick prep for a warm satisfying meal
Ingredients
Scale
1 lb fresh salmon fillet
4 slices of bacon
1 medium onion, diced
2 cloves garlic, minced
2 medium potatoes, diced
2 cups chicken or vegetable broth
1 cup heavy cream
1 cup corn (fresh, frozen, or canned)
1 tablespoon fresh dill, chopped
Salt and pepper to taste
Instructions
In a large pot, over medium heat, cook the bacon until crispy. Remove and let drain on paper towels, then crumble. Keep that exquisite rendered fat in the pot.
Add the diced onion and cook in the bacon fat until soft, about 5 minutes. Add the garlic and sauté for another minute.
Toss in the diced potatoes, and pour in the chicken or vegetable broth. Bring to a boil, then reduce the heat and let it simmer for about 10-15 minutes, or until the potatoes are tender.
Chop the salmon into bite-sized pieces and add it to the pot. Cook for about 5-7 minutes, until it’s opaque and flakes easily.
Pour in the heavy cream and stir in the corn. Let it simmer for another 5 minutes, allowing the chowder to thicken and the flavors to meld. Adjust seasoning with salt and pepper.
Ladle the chowder into bowls, then sprinkle with crumbled bacon, fresh dill, and any garnishes you've opted for.
