1 cup granulated sugar (for caramel)
1/2 cup heavy cream
1/4 teaspoon sea salt
Instructions
Prepare the crust: In a large mixing bowl, combine the flour, sugar, and salt. Add the cold butter and mix until the mixture resembles coarse crumbs. Gradually add the ice water, mixing until the dough just comes together. Wrap in plastic wrap and chill for at least 30 minutes.
Prepare the filling: In another bowl, combine the chopped apples, brown sugar, and cinnamon. Toss until the apples are evenly coated and set aside.
Preheat the oven: Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish.
Roll out the crust: After chilling, roll out the dough on a lightly floured surface. Fit it into the greased baking dish, pressing it into the corners. Trim any excess dough from the edges.
Add apple filling: Spread the apple mixture evenly over the crust.
Make the caramel: In a saucepan, melt the granulated sugar over medium heat. Stir constantly until it melts and turns a golden amber color. Slowly add the heavy cream (be careful, it will bubble) and stir until smooth. Remove from heat and stir in the sea salt.
Assemble and bake: Pour the caramel over the apple layer, spreading it evenly. Bake for 30-35 minutes or until the apples are tender and the edges are golden brown.
