Ingredients

  • Fresh figs (about 500g)
  • Unsalted butter (100g)
  • Granulated sugar (150g)
  • Salted honey (100g)
  • Pistachios (50g, chopped)
  • Puff pastry (1 sheet)
  • Fresh thyme (optional)

  • Instructions

  • Preheat your oven to 190°C (375°F).
  • Wash the fresh figs and cut them in half lengthwise. Set aside.
  • In a medium-sized oven-proof skillet, melt the unsalted butter over medium heat.
  • Add the granulated sugar and allow it to dissolve completely, stirring gently to create a smooth caramel sauce.
  • Once the sugar has melted and begins to turn golden, add the salted honey, stirring continuously for about 2-3 minutes until the mixture thickens slightly.
  • Carefully place the halved figs cut side down in the skillet, arranging them in a circular pattern. Cook for 5 minutes until the figs begin to release their juices and soften slightly.
  • Remove the skillet from heat and sprinkle the chopped pistachios over the figs. Lay the puff pastry over the figs, tucking the edges into the skillet.
  • Cut slits in the pastry to allow steam to escape while baking.
  • Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the pastry is golden brown and puffed.
  • Once baked, carefully remove the skillet from the oven and let it cool for a few minutes. Place a large plate over the skillet and invert it to release the tart, so the figs are on top. Serve warm.
