Ingredients
Fresh figs (about 500g)
Unsalted butter (100g)
Granulated sugar (150g)
Salted honey (100g)
Pistachios (50g, chopped)
Puff pastry (1 sheet)
Fresh thyme (optional)
Instructions
Preheat your oven to 190°C (375°F).
Wash the fresh figs and cut them in half lengthwise. Set aside.
In a medium-sized oven-proof skillet, melt the unsalted butter over medium heat.
Add the granulated sugar and allow it to dissolve completely, stirring gently to create a smooth caramel sauce.
Once the sugar has melted and begins to turn golden, add the salted honey, stirring continuously for about 2-3 minutes until the mixture thickens slightly.
Carefully place the halved figs cut side down in the skillet, arranging them in a circular pattern. Cook for 5 minutes until the figs begin to release their juices and soften slightly.
Remove the skillet from heat and sprinkle the chopped pistachios over the figs. Lay the puff pastry over the figs, tucking the edges into the skillet.
Cut slits in the pastry to allow steam to escape while baking.
Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the pastry is golden brown and puffed.
Once baked, carefully remove the skillet from the oven and let it cool for a few minutes. Place a large plate over the skillet and invert it to release the tart, so the figs are on top. Serve warm.
